Consumers' Guide to Cooking With Gas
The Gas Advantage
Cooking with gas takes the guesswork out of meal preparation. Turn the flame to any setting, and your gas range responds instantly. Gas ranges provide the control that appeals to cooks everywhere. And like other gas appliances, gas ranges can save you time, energy, and money.

Economical
Cook with gas for only pennies per meal. Gas ranges turn on and off instantly, saving you time, energy and money. While gas models may cost a little more than their electric counterparts, it's almost always less expensive to use gas in the long run.
Energy Efficient
Gas flames tailor themselves to the share of any pot or pan, virtually eliminating wasted energy. Today's gas ranges light automatically without a continuously burning pilot light, and use about half the amount of primary energy (crude oil) as electric ranges. Preheating is generally not necessary, because gas gives instant heat.
State-of-the-art Features
Gas ranges come in a variety of brands, sizes, colors and styles to suit your cooking needs and decor. You'll find gas and microwave combinations, convection ovens, wall ovens and European-style convertible cooktops. Gas ranges are available in free-standing, slide-in, built-in and professional-sized models. Special features include state-of-the-art downdraft cooktops for indoor grilling, programmed touch controls and top griddles.
Dependable
Gas continues to provide energy for cooking, even during an electrical power outage. That's dependability you can count on.
Versatile
Gas is well-suited for all types of cooking. The flexible flame of a gas range gives you an infinite number of heat settings instantly, and offers the advantage of precise temperature control. Some of today's gas ranges also feature programmed cooking that allows you to automatically start and stop your oven. As a result, food is cooked perfectly, every time.
Easy to Clean
Some of today's gas ranges feature one-piece lift-up/lift-off cooktops that provide easy access for cleaning under burners. Other feature sealed burners that prevent spills from running underneath the cooking surface. For your oven, gas ranges offer continuous-cleaning and self-cleaning features. When broiling, the gas flame consumes spatters and smoke, leaving your kitchen spotless, cool and comfortable.
Environmentally Sound
Gas is friendly to the environment because it is clean burning. The synthetic natural gas and propane used in Hawaii are produced from a clean, environmentally sound process.
New Developments in Gas Technology
The gas industry, largely through efforts of the American Gas Association and the Gas Research Institute, continues to conduct important research to improve the efficiency and technology of modern gas appliances. Today, gas is being used for not only heating water, drying clothes and cooking, but also for power generation, air conditioning, automotive fuels, fireplaces and lighting.

Energy-Saving Cooking Tips
- Adjust the flame to fit the pan size. Never extend a gas flame beyond the bottom of the pan; this only wastes heat.
- Be sure that your pot cover fits well. Good-fitting covers keep pan temperatures more even and hold in heat, odor and steam.
- When using a gas oven, set timer for the estimated cooking time and open the oven door only when necessary. The oven temperature drops whenever the door is opened.
- Preheating is usually unnecessary. However, if the manufacturer of your gas oven does recommend preheating, preheat no longer than 10 minutes. Any longer only wastes energy.
- Turn the oven off as soon as cooking is completed.
- Use the oven to full capacity whenever possible. Plan meals so several dishes can be cooked in the oven simultaneously. Bake double recipes or cook an entire meal in the oven·meat, potatoes, vegetables, hot bread and dessert.
