Herb and Olive Oil Marinade

food01Ingredients:

  • 1 cup extra virgin olive oil
  • 2 sprigs fresh rosemary
  • 2 branches fresh thyme
  • 1 whole lemon, sliced

Procedure:

Combine all ingredients in a bowl and mix well. Add turkey and toss gently, so the meat is covered evenly with the marinade. Cover and refrigerate overnight.

Miso Marinade

  • 1 cup miso
  • ¼ cup soy sauce
  • ¼ cup sake
  • ¼ cup mirin
  • ½ cup green onion, chopped

Procedure:

Combine all ingredients in a bowl and mix well. Add turkey and toss gently, so the meat is covered evenly with the marinade. Cover and refrigerate overnight.

Aji Amarillo Yogurt Marinade

  • 1 cup plain yogurt
  • 2 tablespoons aji Amarillo (Peruvian yellow pepper paste)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon cardamom
  • 1 cup cilantro, chopped
  • ½ cup green onion, chopped
  • 2 tablespoons fish sauce
  • Salt, to taste

Procedure:

Combine all ingredients in a bowl and mix well. Add turkey and toss gently, so the meat is covered evenly with the marinade. Cover and refrigerate overnight.

Hoisin Marinade

Ingredients:

  • 1 cup hoisin
  • 2 tablespoons sriracha
  • 2 tablespoons tahini
  • 1 tablespoons peanut butter
  • Juice of one lemon

Procedure:

Combine all ingredients in a bowl and mix well. Add turkey and toss gently, so the meat is covered evenly with the marinade. Cover and refrigerate overnight.

Ingredients:

  • 1 bay leaf
  • onion cut in wedges
  • turkey bones (with some meat left on it)
  • 1 can of cream of mushroom
  • 1 cup of uncooked (washed) rice
  • 1 tsp of prepared yellow mustard
  • salt and pepper to taste

Procedure:

  1. Add water to turkey bones (with some meat left on it) in enough water to cover the bones.
  2. Add onion cut in wedges
  3. 1 bay leaf
  4. Boil for at least 45min- 1hr
  5. Shred all the turkey meat of the bone and make sure all bone fragments are out of the soup.
  6. Add to soup 1 can of cream of mushroom and 1 cup of uncooked (washed) rice.
  7. Boil for 20 min
  8. Turn down to simmer and add one can of mushrooms (stems and pieces) and add in 1 tsp of prepared yellow mustard.
  9. Add salt and pepper to taste
